New addition to the Arcila Series! Meet Jairo Arcila ‘Honey Lychee’. This coffee features the bright notes of lychee, highlighting the essence of filter coffee in a whole new experience!
Produced by Jairo Arcila, a third-generation coffee grower from Quindío, Colombia. Following his retirement in 2019, Jairo chose to push the boundaries of traditional farming by pivoting into the world of elite specialty coffee. Collaborating closely with his sons, Carlos and Felipe Arcila, who are themselves renowned specialty coffee experts. Jairo now transformed his estates to cultivate rare, exotic varieties such as Pink Bourbon, Java, Papayo, and Gesha. Today, this unique generational partnership empowers Jairo to craft incredibly complex, experimental flavor profiles that are celebrated worldwide
Now, ready to be launched by Coffeenatics, Jairo Arcila ‘Honey Lychee’. This coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage, dehydrated lychee and wine yeast were added as a compost
The cherries were then pulped and placed to dry on raised beds with lychee placed amongst the coffee until the ideal moisture content was achieved. The innovative idea behind using fruits in the fermentation stage was created during the times of pandemic with excessive fruit harvest and no market to sell. This method reduces wastage by including the dehydrated fruits into the coffee fermentation process
Here is our recommended recipe for Jairo Arcila 'Honey Lychee',
- Coffee Beans: 16,5gr (Grind Size: Medium)
- Water: 250ml
- Water Temperature: 90°C
Step 1: Gently pour 50ml of water clockwise over the coffee bed, ensuring all grounds are evenly wet. Let the coffee bloom for 30 seconds
Step 2: Pour the next 150ml (bringing your scale total to 200ml) using a steady swirl pour from the center outward to extract the vibrant sweetness. Then, without stopping, do a center pour directly down in the middle until your scale total is 250ml
Step 3: Once the water drains completely, pour it into your favorite cup, and enjoy!
